The Culinary Brigades of Montana is Thomas M. Miller's professional development program — a structured, immersive curriculum built around the classical brigade system and elevated for the modern culinary professional. Participants work alongside Thomas in real kitchen environments, in Montana's fields and forests, and at the Dinner Theater table. This is not a cooking school. It is an apprenticeship in the fullest sense of the word.
The Curriculum
Four Pillars of Mastery.
Classical Technique
The foundations of French classical cuisine — stocks, sauces, butchery, pastry — taught with rigor and reverence. Every technique is traced to its origin and understood before it is executed.
Seasonal Intelligence
Learning to read the land. Field sessions in Montana's wilderness teach participants to identify, harvest, and compose with wild ingredients. The season is the curriculum.
The Philosophy of Service
Hospitality as a discipline of attention. Participants study the art of the table — how to read a room, compose an evening, and serve with the kind of presence that transforms a meal into a memory.
Leadership & Brigade Culture
The brigade is a living organism. Participants learn to lead with clarity, communicate under pressure, and build kitchen cultures that produce extraordinary work without sacrificing the people who do it.

Upcoming Seminars
Each seminar is a standalone intensive — two to four days in length, capped at twelve participants, held in Montana. Seminars may be attended individually or as part of the full Brigade curriculum.

The Stock & Sauce Intensive
OpenClassical Foundations
A deep immersion in the mother sauces and their derivatives. Participants will produce and taste their way through the classical French sauce canon, understanding the logic and flavor architecture that underlies all of Western cuisine.

Autumn Forage & Ferment
OpenSeasonal Intelligence
Two days in the field identifying and harvesting Montana's autumn bounty — mushrooms, roots, berries, and wild greens — followed by a full day of fermentation, preservation, and composition in the kitchen.

Filling FastPhilosophy of Service
A seminar on the philosophy and practice of hospitality — how to design an evening, compose a room, and serve with the kind of presence that elevates a meal into an event. Culminates in a live Dinner Theater service.

Winter Butchery & Charcuterie
OpenClassical Technique
A four-day intensive in whole-animal butchery and classical charcuterie. Participants will work with Montana-raised beef, pork, and game — breaking down whole animals, producing cured meats, pâtés, and terrines.

Participants are selected for their commitment to craft, their curiosity, and their willingness to be genuinely changed by the experience. Applications are reviewed on a rolling basis.
No formal culinary degree required — commitment and curiosity are the only prerequisites.
Participants may apply for individual seminars or the full Brigade curriculum.
International applicants are welcome.
